Mercenary BBQ
The roots of Mercenary BBQ can be traced back to the early 1940's where Paul and William Hene started the Hene Meat Company in Indianapolis. They learned the meat business from their father in Germany while working at his butcher shop. They opened the Hene Meat Company and eventually created the King David brand of smoked meats. Grandson Brent Joseph resurrected the King David brand in 2006 when he opened King David Dogs. Fast forward to 2010 when Brent received a smoker as a birthday gift from his wife. A 14 plus year veteran of the restaurant industry, Brent enjoyed all things meat, especially smoked meat, but was hesitant to pick up another hobby. Well, that didn’t last long.
Once Brent got his smoker fired up, he began reading everything he could find about how to use his smoker inventively, creatively, and effectively. Brent has a magic touch when it comes to making delicious proteins, and this new hobby quickly evolved into a passion. After a while it he couldn’t even post about what he was making on social media without friends or family calling or even “just stopping by to see when the ribs were ready.” After a few years of perfecting his own signature rubs and lots of sampling, people started asking him to cook for their events. Weddings, birthday parties, graduation parties, holidays, and family events were all treated to Brent’s custom craft BBQ skills. In 2018, he decided to make it official and Mercenary BBQ was born.
